The word “maftoul” is Arabic for “hand rolled.” Our whole wheat maftoul is made from flour produced by small farmers in Jenin in the West Bank. It’s handmade in the traditional way by members of a women’s cooperative in Jericho, who use the proceeds to support their families.
Basic Maftoul Cooking Instructions: Use 1 cup grain to 2 cups water or broth. Add a splash of olive oil and salt to taste. Bring the cooking liquid and maftoul to a boil, then turn down the heat and simmer for about 10–15 minutes. Check for texture. If you like it softer, cook a little longer.
