Fair Trade Olive Oil from Palestine
Cold Pressed Extra Virgin
"The land and sky of Palestine bring you this gift of peace"
Palestinian olive oil is the product of millennia of cultivation by
Palestinian farmers in arid valleys and on mountainside terraces. Its
distinct flavor and excellent quality is highly prized and well-known to
lovers of fine olive oil. North Americans can now discover this
excellent oil for themselves.
In the face of great dispossession over the last 60 years, Palestinians
have clung more desperately to their land and the olive tree is a symbol
of their ties to the land. The humble olive tree also has real practical
worth as the tree of wealth, protection and security, of shelter and
sustenance. In total, the olive tree and its products represent a major
source
of income for over 100,000 Palestinian families.
Zatoun olive oil comes from farm co-operatives in the central corridor
running from Jenin in north to Ramallah in south. They operate through
the Palestine Fair Trade Association.
One dollar from each bottle is given to "Project Hope," an arts and
education program for young people in Palestine. Another dollar from
each bottle is donated to " Trees for Life," a world-wide project to
35,000 plant olive tree saplings in Palestine to replace destroyed trees.

| ZA'TAR |
Prepared by Kufr Jamaal Women's Cooperative, in Palestine
1 ounce (28 grams) in a reusable plastic container
A traditional staple in the Palestinian kitchen, za'tar is made from powdered thyme, sesame seeds, and sumac (a spice made from ground sour berries). Thyme is believed --by Palestinians, at least-- to improve the memory. It is eaten with Arabic (a.k.a. pita) bread and olive oil; you dip the bread in the oil, and then in the za'tar.
